Gongura Chicken Pickle: Why This Tangy Andhra Favourite Wins Over Every Chicken Lover

If you've ever had regular chicken pickle and thought, "this is great, but I wish it had a little more tang," then gongura chicken pickle is waiting for you.

In Andhra, gongura and chicken are a famous pair. Gongura kodi curry is cooked in homes and served in Andhra-style restaurants across the country. The sour sorrel leaves cut through the richness of the chicken and the heat of the chilli, creating a flavour that's bold, tangy and very hard to stop eating. Gongura chicken pickle brings that same combination to a jar.

What Is Gongura Chicken Pickle?

It's chicken cooked the Andhra pickle way, with red chilli, ginger-garlic and spices, but with one big difference: gongura leaves are cooked into the masala.

Our Gongura Chicken Pickle is fresh chicken cooked with tangy gongura (red sorrel) leaves, Andhra red chilli, ginger-garlic and spices, finished with lemon juice in groundnut oil.

The ingredients listed on the product page: fresh chicken, fresh gongura leaves (sorrel leaves), red chilli powder, mustard seeds, fenugreek seeds, garlic, ginger, salt, turmeric, coriander seeds, groundnut oil, curry leaves, cumin and lemon juice.

How It Tastes

  • Tangy first: the gongura sourness hits immediately
  • Spicy next: Andhra red chilli follows
  • Savoury and garlicky: ginger-garlic and curry leaves
  • Earthy: the leafy, slightly earthy note of gongura
  • Bright: a finishing touch of lemon

The masala is darker and thicker than regular chicken pickle, because the cooked leaves become part of it. Every piece comes coated in that tangy green-brown paste.

Gongura Chicken vs Regular Chicken Pickle

We make three chicken pickles, and here's how they differ:

  • Chicken Pickle: The family favourite. Bone-in chicken in red chilli, ginger-garlic, curry leaves and warm spices like cloves, cardamom and cinnamon. Spicy and aromatic.
  • Boneless Chicken Pickle: Same Andhra masala style, only boneless pieces. Easiest to eat and share.
  • Gongura Chicken Pickle: Chicken pieces in the traditional style, with gongura leaves for a sour, tangy masala.

Simple rule: if you love sour, tangy food, choose gongura chicken. If you prefer warm-spiced heat, choose regular chicken. If you want no bones, choose boneless (note that boneless doesn't include gongura). For a deeper look at the first two, see our post on chicken pickle vs boneless chicken pickle.

The Best Ways to Eat Gongura Chicken Pickle

Hot rice, ghee and onion

The classic. A piece or two with masala, hot rice, a generous spoon of ghee and a slice of raw onion. Many Telugu people say this is the single best plate of rice in the world.

With pappu

Plain dal and rice with gongura chicken on the side. The mild dal balances the sour-spicy pickle.

With curd rice

Surprisingly good. The cool curd rice and the tangy chicken make a lovely contrast.

With chapati or parotta

Remove the bones and shred the chicken into a warm chapati with onion and a squeeze of lemon.

In fried rice

Shred a couple of pieces, bones removed, and toss with leftover rice, onion and a spoon of the pickle oil. Gongura fried rice is a revelation.

Who Should Try It?

  • Gongura lovers who also eat chicken
  • Telugu families missing gongura kodi from home
  • Chicken pickle fans who want something new
  • Anyone who loves sour food, like those who enjoy Goan vindaloo or Kerala-style kudampuli fish
  • People living outside the Telugu states, where fresh gongura leaves are hard to find

Why Gongura Works So Well With Chicken

Chicken has a mild flavour of its own, which is why it takes so well to strong masalas. Regular chicken pickle relies on chilli, ginger-garlic and warm spices like cloves and cinnamon for its character. Gongura chicken swaps that warmth for sourness. The leaves cook down into the masala and cling to the chicken, so each bite carries tang, heat and savoury depth together. The sourness also makes the pickle feel lighter on the palate, which is why many people find themselves reaching for a second piece.

Building a Gongura Basket

If you love this jar, you will probably enjoy the rest of the gongura family too: Gongura Mutton for the classic gongura mamsam taste, Gongura Prawns for coastal seafood lovers, and the vegetarian Gongura Pickle for meat-free days.

How Much to Eat

Like all non-veg pickles, gongura chicken is concentrated. A piece or two with some masala is enough for a plate of rice. A 250 g jar goes further than you'd expect.

Storing Gongura Chicken Pickle

  • Refrigerate after opening. Our product pages recommend this for the best freshness, and for chicken it's especially important.
  • Use a clean, completely dry spoon.
  • Keep pieces under the oil.
  • Never return leftovers from the plate to the jar.
  • Follow the shelf-life details on your jar label.

Frequently Asked Questions

Is the gongura chicken pickle bone-in?

It is made with chicken pieces in the traditional style. If you want only boneless pieces, our Boneless Chicken Pickle is a good choice (without gongura).

What does gongura taste like?

Gongura (red sorrel) is naturally sour with a slight earthy note. With chicken it gives a tangy, spicy flavour that is very different from a regular chicken pickle.
