What is gongura pickle?

Gongura is the sour sorrel leaf (also called roselle leaf) that Andhra and Telangana kitchens turn into pachadi. The leaves are cooked down with red chilli, garlic and spices into a tangy, spicy paste. Our plain Gongura Pickle is the vegetarian classic. The same gongura masala also pairs with meat and seafood in Gongura Chicken, Gongura Prawns and Gongura Mutton.

How we make gongura pachadi

Fresh gongura leaves are cleaned, dried and cooked down, then mixed with red chilli powder, garlic, mustard seeds, fenugreek, cumin, coriander seeds, curry leaves and a little lemon juice, and covered with groundnut oil. For the non-veg versions, the meat or prawns are cooked and fried until dry before being combined with the gongura masala. Every jar is made in small batches after your order.

Spice level: sour first, then spicy. Gongura is at its best mixed into hot rice with ghee; the non-veg versions also go well with chapati and dosa. If a gongura product shows out of stock, message us on WhatsApp and we will tell you when it is available again.

Storage and shelf life

Use a clean, completely dry spoon every time, keep the pieces under the oil layer, close the lid tightly and store the jar in a cool, dry place away from sunlight. Refrigerate after opening for the best freshness. The label on your jar carries the shelf-life details for that batch.

Frequently asked questions

What is gongura in English?

Gongura is the leaf of the roselle plant, often called sorrel leaves. It gives Andhra gongura pickle its natural sourness.

Which gongura pickle should I try first?

For a vegetarian pickle, start with plain gongura pickle. If you eat non-veg, gongura chicken is the most popular combination; gongura prawns and gongura mutton are richer options.

Is gongura chicken pickle (గోంగూర చికెన్ పచ్చడి) the same as chicken pickle?

No. Gongura chicken pickle mixes the chicken with a sour gongura leaf masala, while our regular chicken pickle uses a spice and lemon masala without gongura.

How should I store the pickle and how long does it last?

Use a dry spoon, keep the pieces under the oil, close the lid tightly and keep the jar in a cool, dry place. Refrigerate after opening for the best freshness. The jar label carries the shelf-life details for your batch.
